Vmware is fantastic. We use Vmware server ($free) on two servers to virtually run 5+ other servers. We're using it to keep hardware cost down & compartmentalize various systems.

Might also consider VirtualBox (http://virtualbox.org) -- same concept, but open source & completely free. Sponsored by Sun.

I just started playing with VirtualBox in the past couple of weeks, and it's more "snappy" feeling than Vmware, but not ready to use it in production yet.
