It sound like the UltraEdit version you are using is overwriting some of our settings during update. If this is the case, I would suggest that you locate the setting that enables the automatic update feature and disable it. I do not have the latest version of UE so I cannot tell you how to disable the feature. If you can't find out on your own, they have a pretty responsive support department.
