Sounds a bit strange keith, I have a number of W2k3 installations set up as you had originally. Never experienced that problem. We had a W2K3 server used to grind to a halt every 8-10 hours requiring a reboot, we tracked that back to the CA-eTrust anti-virus software on the server. I still have two workstations ( all workstations XP) that exhibit the same problem but defy all attempts to solve it.
