1) Yes, you should be able to install Comet 2007 in its own folder and setup shortcuts to it for just the Vista workstations. However we can't think of any reason why you wouldn't want all workstations to run Comet 2007. There are no differences in terms of configuration requirements.
2) You should run version 7.01 of the Server Products. This will allow your CometAnywhere host to run either Comet 2006 or Comet 2007 and use the CA2007 licenses. Older versions of the Server Products won't. (This convenience is for subscribers only).
