Steve,
Since I have been in business over 60 years, and have over 3,000 customers, would have some suggestions. Number (1) get a purchase order for whatever work is requested if you don't want to gamble. My experience has been with the purchase order you have moral and legal clout, sometimes it not worth the cost to use it. In our company we have contracts with each of our over 3,000 customers. Some of the contracts are not worth the paper they are written on, but they do make a statement. On your regular customers would suggest a maintenance contract. Most company would prefer that so they know that you are available to help them if something goes wrong. Without a maintenance contract the hourly rate should be quite high. If you turn it over to a collection agency you may or may not get your money, but you can be sure they will never come back to you. (2) Depending on the amount of time involved (which is money) get a down payment at least 1/3rd.
