We're using a rack of PowerEdge 2950's. RAID-1 for OS, RAID-5 for data, 2x Xeon5130 @ 2Ghz, Win2003 Std, 4GB RAM.
For running a Comet-only server (at least in our environment; ~50 users) this is complete overkill. The machine is idle 98% of the time, and any load (from heavy reporting or whatever) lasts a couple of seconds.
If you're planning on doing "Comet only" I can't imagine that you can go wrong with any of the options. If you're planning on running Exchange+Web+SQL+Comet on the same machine, that might be another story.
Each file can be a maximum of 1MB in length Uploaded files will be purged from the server on a regular basis.
