This is possible to do if the servers are accessible via a static IP address. If the IP address changes all the time it'd be very inconvenient to always have to change the cfig to match. You'll need a different cfig for each server connected to. And, here's a possible gotcha, if a user needs access to more than one server at a time, they will need one file server license for each server connection.
In the site and node sections you'd need a SERVER= statement for a type "C" (CFAM) server at the static IP address.
As far as performance is concerned, you'd have to try it using their connection to see what you get.
