Further to update, I am onsite today and I decided to check the switch (a managed 3com). I had many crc errors on server ports (2 nics teamed). I moved everything to an unmanaged Netgear switch and we're getting better performance. Looks like the hangs seem to of gone away. I'll know better with the passing of some time, say a week or two.
