Did you check the CosP.log? It should have gotten an error when it tried to copy the job to the DocMgr archive since the user didn't have access to the folder. This would at least confirm your suspicion of what happened.
If that's the case, I'd look in the Windows temp folder of the user that printed the jobs. The original copies of the jobs should be in there. CosP.log will also show the path for the temp folder where the original copy is.
Each file can be a maximum of 1MB in length Uploaded files will be purged from the server on a regular basis.
